2 Michelin star chef, born and raised in the city of Middelburg in Zeeland, Netherlands on July 20, 1976.
Sidney later left his hometown, at the age of seventeen, driven by his ambition to become a chef.
Restaurant Molina
In 2024, The FACE Style Hotel in Kuala Lumpur opened Restaurant Molina on the 51st floor, in collaboration with the Sidney Schutte.
De Librije ***
During his ten years at De Librije, Sidney played an integral role in the creative process and development of the restaurant's dishes. De Librije's success led to an expansion of the brand in the form of a hotel and a second restaurant called Librije's Zusje, whose Executive Chef Sidney would later become.
Librije's Zusje
In 2015, Sidney returned to the Netherlands with a wealth of knowledge and experience, hungry for a new challenge. About seven months before the Michelin guide awarded him ** stars at Librije's Zusje at the Waldorf Astoria in Amsterdam. In the following years, he expanded his cooking skills and developed his unique culinary style.
The Best Chef
In 2017, Sidney was recognized Chef of the Year by Gault & Millau and ranked No. 65 on “The Best Chef Award 2017” list. In addition, Sidney Schutte had the honor of serving his signature dishes for a month at the Ikarus restaurant in HANGAR 7, Austria.
Spectrum
After a powerful five-year partnership, Jonnie and Thérèse Boer from De Librije handed over the reins to Sidney Schutte and his team at Waldorf Astoria Amsterdam, and the 2 Michelin-starred restaurant was renamed Spectrum. On January 22, 2019, Spectrum**, the restyled restaurant was reopened by Sidney and took full control of his own kitchen for the first time. Together with his motivated and creative team, Sidney is now demonstrating his signature gastronomic flair to enthusiastic diners at Spectrum and introducing them to a whole new facet of fine dining.
SVH Meester-Kok
Characterized by hard work, passion and dedication, Sidney Schutte's contemporary and forward-thinking cuisine has not gone unnoticed. Sidney's influence in the culinary industry received a lot of attention in these years and he was praised with the title “SVH Master Chef”, the highest recognition a chef can achieve in the Netherlands. Known for its use of bold flavors, local and authentic products in both innovative vegetarian and impressive omnivorous dishes, Sidney creates unique plates with exquisite aesthetic appeal, along with a superior rendering of textures and perfectly balanced tasting notes. In addition to his work as Spectrum** Executive Chef**, Sidney also has Café Cliché where he is a “Signature Chef” and Culifex, a new experience center where you can buy everything you need to cook indoors and outdoors.
New generation
In August 2020, Sidney and his partner Gigi van Es welcomed their twin boy and girl named Beer and Lenthe-Sophie. The family of four now lives with Dachshund Booz in Eemnes. In his spare time, Sidney enjoys riding a motorcycle, cooking with friends and a great passion for the art of tattooing.
